Birthday Celebration..

Birthday Cake Safiya, 4 years old..


Oreo Cheesecake

Bahan:
  • 30 keping oreo cookies (buang cream tengah) - kisar halus
  • 1/4 cawan butter - cairkan
Bahan Filling:

  • 16 oz (2 cawan) cream cheese - suhu bilik
  • 1/2 cawan gula halus
  • 1/2 sudu teh esen vanila
  • 1/2 cawan sour cream
  • 2 biji telur
  • 1 cawan oreo yang dicincang halus


Cara Menyediakan:


Base :
Gaulkan oreo kisar dengan butter cair rata-rata. Tekan dalam loyang yang telah digris dan dialas. Pre-heat oven pada suhu 180 Celcius.

Filling:
  1. Pukul cream cheese, gula dan esen vanila dengan kelajuan sederhana hingga benar-benar sebati. 
  2. Masukkan sour cream dan pukul sebati. 
  3. Masukkan telur satu persatu dan pukul sebati. 
  4. Kemudian masukkan oreo yang telah dicincang halus tadi, kaup balikkan hingga rata. 
  5. Bakar secara "steam bake" (letak loyang adunan dalam loyang lain yang berisi air) pada selama 45 minit/hingga bahagian tengah benar2 masak. Sejukkan sekurang-kurangnya selama 4 jam/bermalam

Pandan Raisin Bread

Ingredients :

A :
350g high protein flour
5g milk powder (omitted)
2.5g bread improver

B :
50g castor sugar
1/2 teaspoon salt
30g egg
200g cold water (I used fresh milk)
6g instant yeast
few drops pandan essence
green food coloring
20g santan powder

C :
30g butter
150g raisins (soak for 1 hour, drained)



Method :

1. Combine all B and add in A.
2. When it forms almost a dough, add in butter and knead till it forms soft and smooth dough. Add in soaked raisins, mix well.
3. Cover and prove for 30 minutes.
4. Divide into 50g each and arrange in a baking tray.
5. After the dough had doubled the size, brush with egg wash on top.
6. Bake in a preheated oven at 180 C for 20 to 25 minutes or till golden brown.

Marble Cake

 


Ingredients

  • Melted butter, to grease
  • 250g butter, at room temperature
  • 215g (1 cup) caster sugar
  • 1 tsp vanilla extract
  • 3 eggs
  • 300g (2 cups) self-raising flour
  • 125g (1/2 cup) sour cream
  • 2-3 drops pink liquid food colouring
  • 2 tbs cocoa powder
  • 1 tbs milk

Method

  1. Preheat oven to 180°C. Brush a round 20cm (base measurement) cake pan with melted butter to grease. Line the base and side with non-stick baking paper.
  2. Use an electric beater to beat together the butter, sugar and vanilla in a bowl until pale and creamy. Add the eggs, one at a time, beating well after each addition until combined. Add half the flour to the butter mixture and stir until just combined. Add the sour cream and remaining flour, in batches, and stir until just combined. Divide the batter among 3 bowls. Add a few drops of pink food colouring to 1 portion and stir to combine. Combine the cocoa powder and milk in a small bowl and add to another portion of batter. Stir to combine.
  3. Place alternate spoonfuls of the 3 batters into the prepared pan. Use a spoon to swirl the colours together to create a marble effect. Use the back of a spoon to smooth the surface. Bake for 1 hour or until a skewer inserted into the centre comes out clean. Set aside for 5 minutes to cool before turning out onto a wire rack to cool completely.
How to make sour cream out of normal cream?
Add a tablespoon of vinegar or lemon juice to the bottle of cream.
By using lemon juice, it tastes great but it does make the cream a bit thinner in consistency


Donut

Ingredients :

  • 200g bread flour
  • 20g sugar
  • 1/2 tsp salt
  • 1 tsp dry yeast
  • 140ml fresh milk
  • 20g butter
  • sugar powder
Method:
  1. Mix together flour, sugar dan salt. Stir well.
  2. Add milk and dry yeast. Mix a little bit.
  3. Add butter and mix well.
  4. Knead till smooth and not sticky.
  5. Prove the dough until it has double it's size
  6. Using a rolling pin, roll dough out to about 1 cm thick. Cut with the doughnut cutter. 
  7. Leave it to rise again
  8. Fry
  9. Coat with sugar

2 minutes choc cake

Ingredients : 
1/2 cup self-raising flour
1/2 cup superfine sugar

2 level tablespoons cocoa powder
pinch of salt
1/4 cup melted butter
1/2 cup fresh milk
1 egg
1/2 teaspoon vanilla essence

Method : 
Place all ingredients into a mixing bowl in the above order. Beat well for 2 minutes. Pour into a prepared pan. Bake in preheated at 160 C oven until cake test done, when using a toothpick. 

Vanilla cupcakes

Ingredients : 
1 1/2 cups self-raising flour
1 1/4 cups flour
1 cup butter ~ room temperature
2 cups icing sugar
1 cup fresh milk
4 eggs
1 teaspoon vanilla essence

Method : 
1. Sift both flours.
2. Cream butter and sugar till fluffy.
3. Add in eggs, one at a time. Continue beating.
4. Add in vanilla essence and milk. Mix well.
5. Fold in flour till well mixed.
6. Spoon some bater into the muffin pan layered with papercups.
7. Bake in a preheated oven at 180 C for 20 - 25 minutes or till done.

Chocolate Cheesecake

Ingredients

  • 250g plain chocolate biscuits
  • 125g butter, melted
  • 500g cream cheese, softened
  • 3/4 cup caster sugar
  • 2 eggs
  • 2 tablespoons cocoa powder, sifted
  • 300g sour cream
  • 300g cherries, pitted, halved
  • Chocolate curls, to serve

Method

  1. Preheat oven to 160°C/140°C fan-forced. Grease a 5.5cm-deep, 24cm (base) springform pan. Process biscuits until mixture resembles fine breadcrumbs. Add butter. Process to combine. Press mixture over base of prepared pan. Cover. Refrigerate for 30 minutes.
  2. Using an electric mixer, beat cream cheese and sugar until smooth. Add eggs, 1 at a time, beating to combine. Beat in cocoa and sour cream until just combined. Fold in cherries. Spread over biscuit mixture.
  3. Bake for 35 to 40 minutes or until centre is just firm. Turn off oven. Cool in oven for 3 hours with door slightly ajar. Refrigerate overnight. Top with chocolate curls. Serve.

Kek Coklat Kukus


Bahan-bahan:

  • 2 cawan gula castor
  • 2 cawan tepung gandum
  • 1 cawan sebuk koko
  • 1 cawan minyak masak/ minyak jagung
  • 1 cawan susu cair
  • 3 biji telur gred B
  • 2 sudu teh soda bikabonat
  • 1 sudu teh baking powder
  • 1 sudu teh esen vanila
  • 1 cawan air panas
* I only made 1/2 of the ingredients, with 2 nos of eggs, substitute oil with 100g of butter (melted)


Cara-cara:

  1. Panaskan pengukus
  2. Campur semua bahan kecuali air panas, putar dengan mixer hingga sebati
  3. Bila dah sebati masukkan air panas. dan putar lagi
  4. Bila bahan di putar sebati (tak perlu lama) masuk dalam acuan yang digris dgn minyak dan bolehla di kukus kira-kira 45 - 60 minit
