Tepung Pelita
Bahan - bahan:
1 cawan tepung beras
1 cawan gula
5 cawan air
4 sudu besar tepung beras (rata)
1 bj kelapa diperah menjadi 4 cawan santan
4 helai daun pandan dimesin dengan sedikit air
sedikit kapur dan sedikit garam
Cara - cara:
Tepung:
- Tepung, air, gula, air daun pandan dan air kapur dibancuh sehingga sebati
- Masakkan adunan dan kacau hingga masak dan berkilat.
- Bila dah masak masukkan ke dalam acuan yang disukai.
- Tabur sedikit gula di atas adunan tepung tadi.
- Perah santan, masukkan tepung yg 4 sudu tadi dan garam. Kacau sehingga sebati dan ketepikan.
- Masak santan yg diadun tadi dan kacau sehingga pekat.
- Angkat santan dan curah ke atas tepung yg di dalam acuan tadi.
- Sejukkan

Cucur Udang
Bahan cucur:
2 cawan tepung gandum
1/2 camca besar instant yeast (mauripan)
1 3/4 cawan air
1 mangkuk taugeh (mangkuk sup kecil)
5 pokok kuchai, cuci dan kerat2
1 pokok daun bawang, hiris
1/3 camca teh serbuk kunyit
1 camca teh garam
20 ekor udang sederhana besar, cuci bersih, tos dan lap kering2 dengan paper towel
Bahan sos:
5 biji cili merah
1/3 cawan gula pasir
1/4 cawan cuka
3 ulas bawang putih
1/4 camca teh garam
Cara:
- Dalam satu bekas, masukkan tepung, serbuk kunyit, instant yeast, garam dan kacau rata. Tuang air sedikit demi sedikit sehingga mendapat adunan yang tidak terlalu cair atau pekat. Masukkan taugeh, kuchai dan daun bawang, gaul rata dan perap 30 minit.
- Panas kan minyak untuk goreng terendam. Panaskan senduk mungkun bersaiz sederhana selama 1 minit dalam minyak panas. Sendukkan bancuhan cucur udang tadi ke dalam senduk panas 3/4 penuh, lingkarkan dengan seekor udang dan rendam dalam minyak panas. Biar mengeras sedikit dan tanggalkan dari senduk (gunakan sudip tajam untuk menanggalkan cucur udang tadi). Ulangi proses membuat sehingga selesai. Goreng hingga kuning keemasan. Angkat cucur udang yang telah masak, toskan dan letak atas paper towel.
Cara - cara menyediakan sos:
1. Kisar cili dan bawang putih hingga halus, tuang dalam periuk. Masukkan gula dan garam.
2. Masak dengan api perlahan hingga pekat. Tuang cuka, kacau dan masak lagi hingga berada pada konsistensi sederhana pekat. Sejukkan.

Brownies
Bahan A
1 cawan susu cair
1 cawan butter cair == 200g butter
1 cawan air panas
2 cawan gula perang [brown sugar]
Bahan B [kacau rata]
2 biji telur gred B
1 s/k esen vanilla
Bahan C [ayakkan]
2 cawan tepung gandum
1 cawan serbuk koko
1 s/k baking powder
1 s/k soda bikarbonat (better cuma ½ sudu kecil saja)
Cara
1. Panaskan oven pada suhu 175'C selama 10 minit.
2. Kacau bahan A supaya sebati.
3. Masukkan bahan B.acau rata.
4. Masukkan bahan C dan gaulkan supaya sebati.
5. Lapikkan kertas dalam loyang 10x 10 inci.
6. Bakar selama 45 - 50 minit.
7. Sejukkan kek dan salutkan dengan kerim coklat.
KERIM COKLAT
Bahan
250 gm cooking coklat
1 s/b butter/majerin
1 s/k susu cair
Note: I used chocolate ganache as a topping.
Cara
1. Panaskan coklat dalam periuk/bekas secara double boil.
2. Bila coklat telah cair tutup api dan campurkan butter. Kacau sebati.
3. Masukkan susu cair dan kacau lagi.
4. Salutkan pada kek dan hias mengikut kesukaan.

Haw Flakes Layered Cake
Ingredients :
250g butter
1 1/4 cup castor sugar
7 eggs
1 teaspoon vanilla essence
1 packet Cream Crackers biscuit
1/2 cup condensed milk
1/2 cup fresh milk
4 packets Haw Flakes
coloring of your choice
Method :
1. Get your steamer ready.
2. Blend the cream crakers biscuit to powder form.
3. Grease well your baking tin.
4. Beat butter and sugar till light and creamy.
5. Add in eggs, one at a time and continue beating.
6. Add in vanilla essence, then condensed milk and fresh milk. Mix well.
7. Add in the blended cream crackers biscuits a little at a time till you get the right consistency (cake consistency, not too runny and not too thick).
8. Divide the mixture into small bowls, according to how many color you wish to make. Put a bit of coloring into the mixture and stir well.
9. Scoop about 4 tablespoons of mixture of one color and spread evenly on the greased baking tin.
10. Steam for about 10 minutes or till the layer is cooked.
11. Remove from steamer, arrange the Haw Flakes on that cooked layer. Cover with another 4 tablespoons of different color mixture. Steam like in step # 10.
12. Repeat step # 11 until all the mixture are finished.
13. After the final layer is cooked, bake in the oven for about 10 minutes in medium heat so that the cake will keep longer.

Baked Lemon Cheese Cake
Ingredients:
- 250g plain sweet biscuits
- 150g butter, melted
- 500g cream cheese, softened
- 3/4 cup caster sugar
- 3 teaspoons finely grated lemon rind
- 3 eggs
- 1/4 cup lemon juice
Methods:
- Preheat oven to 160°C/140°C fan-forced. Grease a 6cm-deep, 20cm round springform pan. Process biscuits until finely chopped. Add butter. Process until combined. Press mixture over base and side of prepared pan. Refrigerate for 15 minutes.
- Meanwhile, beat cream cheese, sugar and lemon rind together until smooth. Add eggs, 1 at a time, beating until combined. Add lemon juice. Beat for 1 minute. Pour mixture into prepared pan.
- Bake for 50 minutes to 1 hour or until filling is just set (mixture may wobble slightly in centre, but will firm on standing). Cool in oven with door slightly ajar. Refrigerate for 4 hours or until cold. Dust with icing sugar and serve with cream.

Kuih Seri Muka
Bahan-bahan ( size loyang 22cm )
Bahan lapisan bawah:-
- 500gm beras pulut
- 400ml santan cair
- 1 st garam
- 2 sm minyak
- 120gm tepung gandum
- 3 sm tepung jagung
- 140gm gula
- 3 biji telur
- 450ml santan pekat
- 1/2 st garam
- 300ml air + 10 helai daun pandan dikisar utk dijadikan air pandan atau 1 st pandan paste)
Cara-cara
Untuk lapisan bawah:
- Sediakan kukusan terlebih dahulu. Biarkan air mendidih.
- Bersihkan beras pulut dan direndam selama 10-20min.
- Toskan beras pulut. Tak perlulah lama.
- Satukan semua bahan2 didlm loyang dan dikacau sedikit agar minyak dapat diratakan.
- Kukus diatas kukusan yg telah sedia mendidih selama 20-30min.
- Keluarkan loyang dari kukusan dan ratakan permukaan pulut tadi. Siap untuk dilapis dgn lapisan atas.
- Pukul gula bersama telur hingga kembang / pukul sebentar pun boleh.
- Masukkan santan yg telah dilarutkan bersama garam. Diikuti dgn air pandan dan dipukul/dikacau lagi
- Akhir sekali ayakkan tepung gandum & tepung jagung ke dlm adunan tadi. Dipukul/dikacau lagi agar tidak berbiji.
- Tapis adunan dan masukkan ke dalam loyang berisi pulut tadi. Tutup loyang dengan aluminium foil supaya air daripada penutup kukusan tidak menitik ke dalam loyang atau tutup penutup kukusan dengan kain.
- Pastikan air kukusan telah mendidih. Bila dah letakkan loyang, api perlu sederhana. Kukus selama 45min atau 1 jam.
- Pastikan kuih betul2 sejuk supaya mudah dipotong.
- Potong menggunakan pisau plastik supaya cantik.
- Adunan ini agak tebal utk kedua-dua lapisan. Boleh dikurangkan 1/4 daripada adunan.

Oreo Cheesecake

Bahan:
Cara Menyediakan:
Base :
Gaulkan oreo kisar dengan butter cair rata-rata. Tekan dalam loyang yang telah digris dan dialas. Pre-heat oven pada suhu 180 Celcius.
Filling:
- 30 keping oreo cookies (buang cream tengah) - kisar halus
- 1/4 cawan butter - cairkan
Bahan Filling:
- 16 oz (2 cawan) cream cheese - suhu bilik
- 1/2 cawan gula halus
- 1/2 sudu teh esen vanila
- 1/2 cawan sour cream
- 2 biji telur
- 1 cawan oreo yang dicincang halus
Cara Menyediakan:
Base :
Gaulkan oreo kisar dengan butter cair rata-rata. Tekan dalam loyang yang telah digris dan dialas. Pre-heat oven pada suhu 180 Celcius.

- Pukul cream cheese, gula dan esen vanila dengan kelajuan sederhana hingga benar-benar sebati.
- Masukkan sour cream dan pukul sebati.
- Masukkan telur satu persatu dan pukul sebati.
- Kemudian masukkan oreo yang telah dicincang halus tadi, kaup balikkan hingga rata.
- Bakar secara "steam bake" (letak loyang adunan dalam loyang lain yang berisi air) pada selama 45 minit/hingga bahagian tengah benar2 masak. Sejukkan sekurang-kurangnya selama 4 jam/bermalam
Pandan Raisin Bread

Ingredients :
A :
350g high protein flour
5g milk powder (omitted)
2.5g bread improver
B :
50g castor sugar
1/2 teaspoon salt
30g egg
200g cold water (I used fresh milk)
6g instant yeast
few drops pandan essence
green food coloring
20g santan powder
C :
30g butter
150g raisins (soak for 1 hour, drained)
Method :
1. Combine all B and add in A.
2. When it forms almost a dough, add in butter and knead till it forms soft and smooth dough. Add in soaked raisins, mix well.
3. Cover and prove for 30 minutes.
4. Divide into 50g each and arrange in a baking tray.
5. After the dough had doubled the size, brush with egg wash on top.
6. Bake in a preheated oven at 180 C for 20 to 25 minutes or till golden brown.
Marble Cake
Ingredients
- Melted butter, to grease
- 250g butter, at room temperature
- 215g (1 cup) caster sugar
- 1 tsp vanilla extract
- 3 eggs
- 300g (2 cups) self-raising flour
- 125g (1/2 cup) sour cream
- 2-3 drops pink liquid food colouring
- 2 tbs cocoa powder
- 1 tbs milk
Method
- Preheat oven to 180°C. Brush a round 20cm (base measurement) cake pan with melted butter to grease. Line the base and side with non-stick baking paper.
- Use an electric beater to beat together the butter, sugar and vanilla in a bowl until pale and creamy. Add the eggs, one at a time, beating well after each addition until combined. Add half the flour to the butter mixture and stir until just combined. Add the sour cream and remaining flour, in batches, and stir until just combined. Divide the batter among 3 bowls. Add a few drops of pink food colouring to 1 portion and stir to combine. Combine the cocoa powder and milk in a small bowl and add to another portion of batter. Stir to combine.
- Place alternate spoonfuls of the 3 batters into the prepared pan. Use a spoon to swirl the colours together to create a marble effect. Use the back of a spoon to smooth the surface. Bake for 1 hour or until a skewer inserted into the centre comes out clean. Set aside for 5 minutes to cool before turning out onto a wire rack to cool completely.
How to make sour cream out of normal cream?
Add a tablespoon of vinegar or lemon juice to the bottle of cream.
By using lemon juice, it tastes great but it does make the cream a bit thinner in consistency

Donut

Ingredients :
- 200g bread flour
- 20g sugar
- 1/2 tsp salt
- 1 tsp dry yeast
- 140ml fresh milk
- 20g butter
- sugar powder
- Mix together flour, sugar dan salt. Stir well.
- Add milk and dry yeast. Mix a little bit.
- Add butter and mix well.
- Knead till smooth and not sticky.
- Prove the dough until it has double it's size
- Using a rolling pin, roll dough out to about 1 cm thick. Cut with the doughnut cutter.
- Leave it to rise again
- Fry
- Coat with sugar

2 minutes choc cake

Ingredients :
1/2 cup self-raising flour
1/2 cup superfine sugar
2 level tablespoons cocoa powder
pinch of salt
1/4 cup melted butter
1/2 cup fresh milk
1 egg
1/2 teaspoon vanilla essence
Method :
Place all ingredients into a mixing bowl in the above order. Beat well for 2 minutes. Pour into a prepared pan. Bake in preheated at 160 C oven until cake test done, when using a toothpick.
Vanilla cupcakes

Ingredients :
1 1/2 cups self-raising flour
1 1/4 cups flour
1 cup butter ~ room temperature
2 cups icing sugar
1 cup fresh milk
4 eggs
1 teaspoon vanilla essence
Method :
1. Sift both flours.
2. Cream butter and sugar till fluffy.
3. Add in eggs, one at a time. Continue beating.
4. Add in vanilla essence and milk. Mix well.
5. Fold in flour till well mixed.
6. Spoon some bater into the muffin pan layered with papercups.
7. Bake in a preheated oven at 180 C for 20 - 25 minutes or till done.
Chocolate Cheesecake

- 250g plain chocolate biscuits
- 125g butter, melted
- 500g cream cheese, softened
- 3/4 cup caster sugar
- 2 eggs
- 2 tablespoons cocoa powder, sifted
- 300g sour cream
- 300g cherries, pitted, halved
- Chocolate curls, to serve
Method
- Preheat oven to 160°C/140°C fan-forced. Grease a 5.5cm-deep, 24cm (base) springform pan. Process biscuits until mixture resembles fine breadcrumbs. Add butter. Process to combine. Press mixture over base of prepared pan. Cover. Refrigerate for 30 minutes.
- Using an electric mixer, beat cream cheese and sugar until smooth. Add eggs, 1 at a time, beating to combine. Beat in cocoa and sour cream until just combined. Fold in cherries. Spread over biscuit mixture.
- Bake for 35 to 40 minutes or until centre is just firm. Turn off oven. Cool in oven for 3 hours with door slightly ajar. Refrigerate overnight. Top with chocolate curls. Serve.
Kek Coklat Kukus
Bahan-bahan:
- 2 cawan gula castor
- 2 cawan tepung gandum
- 1 cawan sebuk koko
- 1 cawan minyak masak/ minyak jagung
- 1 cawan susu cair
- 3 biji telur gred B
- 2 sudu teh soda bikabonat
- 1 sudu teh baking powder
- 1 sudu teh esen vanila
- 1 cawan air panas
* I only made 1/2 of the ingredients, with 2 nos of eggs, substitute oil with 100g of butter (melted)
Cara-cara:
- Panaskan pengukus
- Campur semua bahan kecuali air panas, putar dengan mixer hingga sebati
- Bila dah sebati masukkan air panas. dan putar lagi
- Bila bahan di putar sebati (tak perlu lama) masuk dalam acuan yang digris dgn minyak dan bolehla di kukus kira-kira 45 - 60 minit
